Here are some great wines to drink with that special someone this month. Cozy up the next cold night, and don’t forget Valentine’s is this month. Or if you just need a great glass of wine, give these a try.

 

Taittinger Brut Prestige$42.99 $750-ml Composed of all three champagne varietals from over 35 different crus and harvests. With over three years cellar aging to reach full maturity, this is a balanced but powerful wine. Bright gold color with a fine bubble stream. Very expressive nose of peach, white flowers and brioche. Flavors of honey and fresh fruit crisply dance on your tongue. Ideal to celebrate a special night.

Stag’s Leap Napa Valley Cabernet Sauvignon $52.99 750-ml. Vivid aromas of red and black fruit characteristically introduce the wine. The palate emphasizes balance, with firm, round tannins and a complex finish that features a variety of notes from leather, espresso and chocolate. This is for serious red wine lovers. Perfect with an over the top romantic dinner.

Dios Baco Cream Sherry $26.99 750-ml. The winery Dios Baco was built in 1848, over 150 years ago. Wine has been made at this sight since the late 1750’s. This cream sherry is aromatic with dates, almonds, brown sugar, and dried fruit. Thick and rich on the palate with the flavors following the nose. Drink this with that decadent chocolate dessert, or an after dinner cheese and fruit plate.

February Recipe of the Month

Filet Mignon Perfection

This is possibly our favorite way to prepare filet mignon. The steaks come out with the perfect sear and are very tender and moist. The key is not to flip the steaks too soon, and to pat them completely dry. We featured this recipe in our World of Wines Wine Club for the month of February as well. This recipe is the perfect match for a full bodied red wine. For a special dinner complement the steaks with the Stag’s Leap Cabernet $52.99, refer to our Valentine Wines article for tasting notes. Or for a more casual meal pair with the Tikal Malbec/Bonarda $20.99 blend from Argentina. The wine combines the perfect balance of power, fruit and richness – a treat for red wine lovers.

 

 

 

2 (1 1/2- to 2-inch-thick) center-cut filets mignons (beef tenderloin steaks; 6 to 7 oz each)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 tablespoon vegetable oil

butter

Pat steaks completely dry, season with salt and pepper. Preheat oven to 350, position oven rack in middle. Heat an 8 to 9 inch cast iron skillet to med. high heat for 2 min. Add oil to skillet, swirl to coat. Sear steaks on one side, without moving, until a deep brown crust forms, 3 1/2 mins. Turn steaks, sear 3 1/2 mins more. Using tongs, brown sides of steaks, less than a min. total. Place skillet in oven, cook 12 to 18 mins. for med.-rare. Remove steaks from oven, top with 1/4 “ slice of butter. Let stand loosely covered with foil for 5 to 10 mins. Serve!

Chardonnay

February Drink Recipe of the Month

Agave Kiss

2 oz Nice Silver Tequila

1 oz white creme de cacao

1 oz double cream

1/2 oz Chambord

white chocolate flakes for rimming

fresh raspberries for garnish

Preparation: In a cocktail shaker with ice, add tequila, white crème de cacao, double cream and Chambord. Shake for 15 seconds. Pour into a chilled cocktail glass with white chocolate, add a spear of fresh raspberries, and serve.

Kalin Cellars is a small winery located in Marin County, Ca.  They produce miniscule amounts of hand crafted wine.  The most interesting aspect that separates Kalin Cellars from other wineries is that they age their wines prior to release in their underground cellars.  Each wine is aged until it is considered to be in its prime, and then it is released to the market.  Have you ever wondered what a great aged wine tastes like, but did not have the discipline to age it in your cellar before popping the cork?  Well here is your chance to taste a wine that has been aged to perfection.  The 1995 vintage is the current release from Kalin Cellars, utilizing the amazing fruit from Long Vineyards.  Beautiful tangerine fruit, white peaches, orange blossom and toasty notes lead into  lengthy finish of toasted vanilla.  Long Vineyards traditionally produces wines that are intensely flavored, perfumed and powerful.  Robert Parker of the Wine Advocate recently tasted the 1995 vintage and had this to say, “it should continue to drink well for at least another decade.”  This wine has not been filtered or fined and will cast sediment.

This legendary Cabernet from Sonoma County’s Alexander Valley is the perfect gift for the red wine lover in your house.  The 2006 Alexander Valley Cabernet Sauvignon combines full body and richness with moderate alcohol. It has a garnet color and a nose of cassis liqueur, nutmeg and dark chocolate. On the palate, it has a rich, mouth-coating attack, great expression of fruit, a full-body and beautifully integrated tannins that lead to a long, spicy finish. Angel’s Envy Bourbon Finished in Port Barrels 750ml. $47.99

Angel’s Envy is an artisan bourbon inspired by Lincoln Henderson’s lifetime spent perfecting his craft and creating fine spirits. It is recognized by Malt Advocate, The Bourbon Review and Maxim as one of the top spirits released in 2010.  The Bourbon is a mixture of corn and Rye that is aged for 4 to 6 years in American White Oak Barrels.  It is then finished in Port Barrels for 6 months of aging.  It is an exceptionally smooth and nuanced Bourbon.  The combination of White Oak and Port Barrel aging is a gorgeous marriage of bourbon and port, with flavors ranging from the expected – vanilla, oak, toffee and cinnamon – to welcomed port accents like cherries and raisins. It’s remarkably well-balanced from start to finish, and its smooth mouthfeel begs for another sip.

Friday Night Wine Tasting: 12/23/11

Brrr! It looks like we will be having a white Christmas this year! Stop in the store this Friday evening to taste some wines that are sure to keep you warm during this cold snowy weather.

We will be showcasing the Lioco Chardonnay from Sonoma County, California. For red selection the rich sultry Michael David Petite/Petit from Lodi, California will be opened.

 

Lioco Winery is all about creating wines that represent sense of place or “terroir”. Their Sonoma County Chardonnay shows a complex, unoaked Chardonnay with a dry full bodied palate filled with lemon, mineral and orchard fruit nuances. The epitome of Sonoma County Chardonnay.

 

 

 

 

Michael David Petite/Petit is a blend of Petite Sirah and Petite Verdot. The combination of these two red grapes equals a wine filled with richness and power. The wine explodes with blackberry fruit doused in vanilla bean. It is sure to keep you warm even when the weather is freezing outside.

Friday Night Wine Tasting: 12/16/11

This Friday we will be popping the corks on three lovely, rich wines from Europe and California!

We will start with the Laboure Roi Pouilly Fuisse from Burgundy. Rarely do we associate value with the region of Burgundy, but this wine fits the bill. The wine displays beautiful Asian pear fruit with candied lemon and an underlying minerality. It is the perfect companion to seafood and creamy cheeses.

The Umani Ronchi Serrano is a delightful Italian red from the Rosso Conero sub region of Marche. The wine is a blend of two local grapes, Montepulciano and Sangiovese. The end result is a soft sultry red, filled with dark black cherry fruit and warm roasted spices. The perfect compliment to stuffed pasta, grilled dishes and a cheese board of hard mature, tangy cheeses.

Last but certainly not least, we present the Chocolate Amore from Trentadue Winery. Trentadue is small boutique winery located in Sonoma, Ca. Not only do they make small lots of wine from their vineyards, but they also sell their fruit to such esteemed wineries as Ridge. The Chocolate Amore is their dessert wine offering. The wine is a Port made from Merlot grapes that is infused with natural chocolate extract. The result is sinfully delicious! Serve poured over ice cream or fresh berries, with chocolates or cheesecake, or simply enjoy on its own. This treat could be a fine substitute for a plate of cookies for Santa!
